Zucchini and potato fritters
Ingredients
- 2 potatoes (medium)
- 1 brown onion (diced, small)
- 1/2 cup corn cob kernels (fresh)
- 1 cup zucchini (grated, tightly packed)
- 1 cup wholemeal plain flour
- 1 tsp baking powder
- 1 tsp paprika (*optional)
- 1 egg
- 1 cup milk
- salt and pepper (to taste)
- 2 tbs olive oil
Method
- Grate potatoes then squeeze out excess starch with your hands over the sink.
- Place potatoes in a large mixing bowl with onion, corn, zucchini, flour, baking powder and paprika. Mix.
- Combine egg with milk in a jug. Add to bowl with other ingredients and stir to combine. Season to taste.
- Heat oil in a large frypan over medium heat. Drop in spoonfuls of mixture. Fry for 2-3 minutes on each side until golden. Repeat with remaining mixture.
These fritters are one of the few healthy meals my kids regularly asks for, what’s great is that they are quick to make, taste delicious, are healthy and can be put in the freezer and saved for another day!
